This course takes students through a comprehensive study of nutritional principles and guidelines. Students will learn about world-wide views of nutrition, nutrient requirements, physiological processes, food labeling, healthy weight management, diet related diseases, food handling, nutrition for different populations, and more. Students will gain important knowledge and skills to aid them in attaining and maintaining a healthy and nutritious lifestyle.

Nutrition

Students will demonstrate an understanding of nutrition by explaining the effects of nutritional health, explaining dietary guidelines, and describing the digestion process.

Energy Nutrients

Students will demonstrate an understanding of energy nutrients by describing the role of carbohydrates, describing the role of proteins, and explaining the role of fat.

Non-Energy Nutrients

Students will demonstrate an understanding of non-energy nutrients by describing the functions of water in the body, explain the role of vitamins in the body, summarizing the role of minerals in the body, and explaining dietary supplement considerations.

Energy Balance

Students will demonstrate an understanding of energy balance by describing weight management, explaining healthy nutrition choices, and explaining physical fitness.

Nutrition-Related Diseases and Disorders

Students will demonstrate an understanding of nutrition-related diseases and disorders by explaining eating disorders, explaining food allergies and food intolerance, explaining effects of alcohol consumption, and describing nutrition-related diseases.

Consumer Nutrition

Students will demonstrate an understanding of consumer nutrition by describing nutritional decision making, explaining nutritional consumer awareness, and summarizing food-safety techniques.

Lifelong Nutrition

Students will demonstrate an understanding of lifelong nutrition by describing lifetime nutritional needs, describing nutritional needs of special populations, and explaining the importance of healthy choices.
